Apricot Chicken Salad Sandwich
2/3 cup chopped cooked chicken breast
1 medium green onion, chopped (about 2 tablespoons)
4 dried apricots, finely chopped
3 tbsp. apricot preserves
2 tbsp. nonfat mayonnaise
2 tsp. chopped fresh parsley (optional)
2 slices Pepperidge Farm German Dark Wheat Bread
Lettuce leaves
Stir the chicken, green onions, apricots, preserves, mayonnaise and parsley in a medium bowl. Divide the lettuce and the chicken salad between the bread slices.
Take your leftover chicken. Chop or tear it up. Start with mayo until creamy. Some salt and pepper to taste.
From there, it's all about the mix-ins:
Chopped bacon.
Apples
Celery
Onion
Scallions
Mustard
Cayenne Pepper
Lime/Lemon
Tarragon or other savory herbs
Capers
Curry Powder
Rutabaga
Radishes
Water Chestnuts
The possibilities are endless. Get a little of the deli salad you like and ';deconstruct'; it -- pull it apart and see what big stuff you recognize, then try identifying the herbs used by taste.

INGREDIENTS: skinlesss/boneless chicken breast, celery, sweet onion, mayonnaise, celery salt, chicken boullion (either powder, cube or paste.)
Poach chicken in water seasoned with boullion. Do not let boil, just simmer, until done. Don't drain. Cover pan and allow chicken to completely cool. I sometimes put in refrigerator overnight. When cool, drain and discard water. Dry meat with paper towel. Mix mayo with celery salt and set aside for flavors to meld. Dice celery (about 2 ribs) to 1 large breast and an equal amount or little less of onion. Dice chicken. Mix all and salt to taste. Cover tightly and refrigerate several hours or overnight.
