This is a greek chicken salad:
3 c Cooked chicken, cut in 3/4';
1 1/4 c Crumbled feta cheese
2/3 c Ripe black olives, pitted
1/4 c Chopped fresh parsley
1 ts Dried oregano (opt.)
2 c Peeled, seeded and diced
1/2 c Yogurt
Lettuce leaves
Dressing:
3 cl Garlic, minced
1 c Mayonnaise

Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
For the chicken breasts:
4 boneless, skinless chicken breasts
2 tbsp olive oil
4 cloves garlic, roughly chopped
1 tbsp dried Italian herb mix (rosemary, thyme, basil, oregano, marjoram)
1 tsp fresh ground black pepper
salt to taste
1/2 lemon, juiced

2 tbsp olive oil
1/4 cup rice vinegar
1/2 lemon, juiced
1 tbsp Dijon mustard

Potato Salad 'New Jersey' Style
This recipe can be used for those backyard summer godmothers that everybody loves. Simple to make and has a wonderful flavor. You can either leave the skins on for a little more texture or remove them for a cleaner look. Both methods provide you with a great cold potato salad.
2 pounds Yukon Gold potatoes
3 hard boiled eggs, finely chopped
1/2 cup mayonnaise
1/2 medium yellow onion, finely diced
2 garlic, finely diced
Kosher salt
Freshly ground black pepper
Sugar, to taste
Boil potatoes in skin and let cool. Slice into quarters. Add eggs, mayonnaise, onion, and garlic and fold together. Season to taste with salt, pepper and sugar.

1 cup mayonnaise
3/4 cup buttermilk
8 tablespoons grated Romano cheese
2 tablespoons crushed dried basil
1/2 teaspoon salt
1 clove garlic, minced
Hot pepper sauce [Serve with at table instead of in dressing. Add 1/4 tsp.
paprika, if desired.]
Directions:
Whisk together oil and mayonnaise. Add buttermilk, cheese, basil, salt, garlic and hot pepper sauce to taste. Mix thoroughly. Cover and let flavors meld overnight in refrigerator. use as dressing

Various deli meat/leftover meat any kind
Various cheese, mild tasting ones are best, but if if you like blu cheese throw it in, again, could clean out that cheese drawer in the fridge
2-4 hard boiled eggs
Head of garlic ~$1 Cut a clove in half an rub the inside of your salad bowl in it.
Bottled dressing or make your own (vinegrette is basically 3parts any oil to 1 part any acid (ie 1 tablespoon vinegar to 3 tablespoons oil) you can use anything from citrus juice to red wine vinegar, even rice wine vinegar to olive oil, canola oil, grapeseed oil etc. stay away from white vinegar, its a bit harsh. Mix and taste. Start with small amouts then add more as you like the flavor (ie, if you like olive oil and balsamic vinegar, use 3t oil and 1t vinegar, mix up and taste, if you like, increase proprotions.) You can add multiple acids, but i stick to two. Remember to season it with at least salt and pepper, but garlic, wine, even tequilia can be added
1/2 red onion, raw, cut into small peices
Any raw veggies/fruit you have on hand. You can grate carrots, slice mushrooms, dice up apples, pears, add corn and blackbeans (with a little cayanne pepper in the dressing) for a southwestern feeling. If its in your fridge, you can probably add it.
In general, this salad can cost you your full $20, assuming you have to buy everything, but obviously the cost can be cut dramatically if there's leftovers in the fridge. So look around before you make a trip to the store.
1 head of iceburg lettuce
1 tomatoe
1 onion
bag of your choice flavor crutons
olives black or green - doesnt really matter
feta cheese
and the walmart packs of ranch that you make yourself - tastes like the kind you get at a restaurant. youll need mayonaise and something to mix it in.
thinly chop the lettuce. slice and dice veggies and cheese however you choose to. mix. add ranch. enjoy.
(i like to eat it with those skinny garlic bread sticks. its pretty good if you dip the bread in the remnants of the ranch.)
shouldnt be more than 10 or 11 bux.

put lettuce and dressing in a bowl. add whatever else is in your refrigerator. cold baked potatoes, leftover chicken, lunch meats and cheeses.
