Paula Deen
* 1 (15-ounce) can very young early peas (recommended: Lesueur)
* 1/4 cup chopped onions
* 2 boiled eggs, crumbled
* Salt and freshly ground pepper
* 2 to 3 tablespoons mayonnaise
* Chopped pimento, optional
Directions
In a colander, drain peas very well. Place drained peas in a medium bowl. Add the onions, crumbled eggs, and mayonnaise, tossing to combine and coat peas. Season to taste with salt and pepper. Add pimento, if using. This recipe is easily doubled or tripled.
The recipe below is for about 3-4 servings, so double or triple the measurements if you want to fill a larger salad bowl.
1 can peas
2 hard boiled eggs, peeled and chopped
1/4 cup chopped onion
1/4 cup chopped celery
2-3 sweet pickles, chopped
2 tbsp. mayonnaise
1 tsp. mustard
Mix all ingredients together and cool in refrigerator for at least one hour. Makes 3-4 servings.
Don't ever buy canned peas! They taste, and look, terrible! Get a package of frozen peas and thaw them out (don't cook them). You're in for a real taste treat then! ... I'd mix mayo with some sour cream; add chopped oregano %26amp; basil; salt %26amp; pepper and maybe a little garlic. Throw in some finely chopped red bell pepper (or pimentos) for color....
I usually use frozen peas that have defrosted. I add a little minced onion, cubed cheddar cheese, thinly sliced or diced celery and a little dill. I use mayo and if I have it handy, some salad shrimp. My teenage son LOVES pea salad. lol. Good luck.
I've had the pea salad with small cubes of cheddar cheese in it as well. And also with water chestnuts.
Have you ever tried it with frozen peas? Don't even have to cook them. Just lightly thaw them out, mix in your other things and you are ready to go!!
