Black Eyed Bean Salad
Ingredients:
鈥?2 cups fresh green beans
鈥?1 can black eyed peas
鈥?1 can black beans
鈥?1 large clove garlic
鈥?1 shallot or small red onion
鈥?3 Tbsp chopped fresh parsley
鈥?1 tsp dried thyme or 1 Tbsp chopped fresh thyme
鈥?1 Tbsp Dijon mustard
鈥?2 Tbsp extra virgin olive oil
鈥?1 Tbsp white vinegar
鈥?Salt and pepper to taste
Prep:
Drain peas and beans in colander, and rinse if necessary. Chop green beans in thirds after taking off ends. Steam green beans until just done, al dente, and a bright green color. Immediately immerse in cold, even icy, water to stop cooking. Mix olive oil, vinegar, Dijon mustard, chopped garlic, chopped shallot, salt, pepper, thyme and parsley in a large bowl. Add drained peas and beans to dressing and mix well, but gently. Last add green beans and toss lightly to coat. Top with fresh parsley and thyme sprigs and serve at room temperature.

Black-Eyed Peas and Hog Jowl or Ham Hocks
INGREDIENTS:
2 pounds dried black-eyed peas
8 ounces hog jowl or 2 small to medium ham hocks
6 cups water water
1 large onion, coarsely chopped
1/2 teaspoon crushed red pepper
1/4 teaspoon sugar
salt, to taste
PREP:
Pick over the peas and rinse well, then soak in cold water overnight. Place ham hocks or hog jowl in large kettle with water, bring to boil, and cook for 1 1/2 hours. Drain peas and add to the hog jowl.
Add whole onion, crushed red pepper, sugar, and salt. Add more water if needed to cover peas. Cover tightly and simmer slowly 2 hours or until peas are tender. Serve with hot cooked rice and cornbread. Serves 8.Dose anyone have a recipe for black eyed bean salad?

hi there.i always do black eyed bean salad like this. soak beans in water over night. than boil them until they are soft. let them cool down. then make garlic paste and mix it with lemon.lots of garlic and lots of lemon. put extra virgin olive oil on beans than the garlic lemon mix. its delicious

3 T olive oil
1 1/2 cups fresh parsley
As required sea salt
As required ground black pepper
METHOD
The night before, cover the beans with boiling water and leave to soak overnight.
In the morning, drain them, cover with lots of fresh water, bring to the boil, then lower the heat. Sprinkle in a little lemon juice, then cover and leave to simmer until tender, about 45 minutes. After about half an hour, add a little more lemon juice (this keeps the white colour of the beans from becoming brown) and a few minutes before the end of cooking time add a little sea salt.
Drain the beans, and while still hot, pour the remainder of the lemon juice and the olive oil over them. Stir well. Leave to cool, then chill.
Chop parsley finely. Just before serving stir in the parsley into the beans and add salt and pepper to taste.
I use my Uncle John's Recipe............................. I go to the local deli and ask them to pack a tub
Black-Eyed Pea Salad:

4 servings
1 (15 1/2 ounce) can black-eyed peas, rinsed and drained
1 celery rib, chopped
1/4 finely chopped red onion
1 jalapeno pepper, seeded and finely chopped
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon mayonnaise
1/4 teaspoon salt
2-3 dashes Tabasco sauce
1 medium roma tomato, diced
1. In a medium size bowl, combine the peas, celery, onion and jalapeno pepper.
2. In a small dish, whish together the oil, vinegar, mayonnaise, salt and Tabasco sauce.
3. Pour the dressing over the peas and mix well; cover and refrigerate until serving time.
4. Just before serving, add the diced tomato and stir to combine.
Black eye beans curry/dry curry/salad
1 cup black eyed beans boiled in salted water
1 serving spoon veg. oil
1 tsp cumin seed
1 tsp mustard seeds
1 tsp ginger paste
1 tsp garlic paste
1 large onion finely chopped
1 green chili finely chopped
1 large tomato finely chopped
1 large tomato pureed
1 tsp chili powder
1 tsp turmeric powder
1 tsp coriander seed powder
1 tsp salt
1 tsp garam masala powder
1/2 cup fresh coriander leaves finely chopped
Heat oil in the wok or thick bottom pan (smoking hot)
add cumin seeds and mustard seeds and stir fry till they crackle
add ginger/ garlic paste/green chili
add chopped onion and continue to fry till onion is pink (stage before golden brown)
add chopped tomatoes and tomato puree
add chili powder/turmeric powder/coriander seed powder/salt and mix well. Cook for 2/3 minutes
add 1 1/2 cup water and add garam masala powder
allow the curry to boil.
serve in serving bowl
add chopped coriander leaves to garnish
add few drops of lime juice before eating
for dry curry add only 1/2 cup water
for salad add no water and add finely chopped onion, capsicum and tomato (one each).
