Does anyone know of a salad or any type of recipe for mango and cucumber?

I did an ingredient search on www.allrecipes.com and found these recipes. I have cooked several recipes off this site and it is relaible.


Seared Scallops with Tropical Salsa

Yields: 4 servings





';Seared scallops are served warm with a spicy, fresh pineapple, mango, cucumber, and bell pepper salsa. Simple, colorful, and delicious.';


INGREDIENTS:


1/2 cup diced fresh pineapple


1/2 cup diced fresh mango


1/2 cup peeled and diced


cucumber


1/2 cup diced red bell pepper


3 tablespoons chopped fresh


cilantro 4 teaspoons fresh lime juice


1 jalapeno pepper, seeded and


minced


salt and pepper to taste


1 pound sea scallops, rinsed


and drained





DIRECTIONS:


1. Combine the pineapple, mango, cucumber, bell pepper, bell pepper, cilantro, lime juice and jalapeno. Season to taste with salt and pepper, and set aside.


2. Heat a large, nonstick fry pan over medium-high heat. Coat the pan with cooking spray. Season the scallops with salt and pepper. Add half of the scallops to the pan; sear until golden brown on both sides, about 2 minutes per side. Transfer the scallops to a warmed plate while cooking the remaining scallops.


3. Spoon the salsa over the scallops, and serve immediately.








Chunky Cucumber Salsa

INGREDIENTS:


3 medium cucumbers, peeled


and coarsely chopped


1 medium mango, coarsely


chopped


1 cup frozen corn, thawed


1 medium sweet red pepper,


coarsely chopped


1 small red onion, coarsely


chopped


1 jalapeno pepper, finely chopped


3 garlic cloves, minced


2 tablespoons white wine


vinegar


1 tablespoon minced fresh


cilantro


1 teaspoon salt


1/2 teaspoon sugar


1/4 teaspoon cayenne pepper





DIRECTIONS:


1. In a large bowl, combine all the ingredients. Cover and refrigerate for 2-3 hours before serving.Does anyone know of a salad or any type of recipe for mango and cucumber?
yes there is: a sushi place i go to has a roll with tempura shrimp, cucumber and mango. it is absolutely delicious. Why not experiment and come up with your own cool creation: you could easily make a summer stirfry with hunks of mango and cucumber for a twist. cheers!Does anyone know of a salad or any type of recipe for mango and cucumber?
Mango Coconut Cucumber Salad


1 cucumber, peeled,seeded,and diced


1/2 teaspoon minced fresh chili peppers


1 tablespoon fresh lemon juice


1 tablespoon fresh lime juice


2 teaspoons brown sugar


2 tablespoons unsweetened dried shredded coconut


1 mango, peeled and diced


1 small red bell pepper, minced





1. In a large bowl, combine the cucumber, chile, lemon and lime juice, brown sugar, coconut, mango, and bell pepper.


2. Toss well.


3. Cover and chill for 20 minutes and serve cold.


4. Just before serving, top with cilantro or spearmint.
PINEAPPLE, MANGO %26amp; CUCUMBER SALSA





1/2 c. pineapple, diced sm.


1/2 c. firm ripe mango


1/2 c. cucumber, diced %26amp; peeled


1/3 c. red bell pepper, diced


1/3 c. tomato, diced


3 tbsp. green onion or chives, finely chopped


3 tbsp. cilantro or 1 tsp. mint juice of 2 limes


Hawaiian chili pepper or jalapeno, to taste


Salt to taste





Cut all ingredients in small diced; mix well, adjust seasoning. Chill to marinate and marry flavors. Good with white fish





MANGO SHRIMP ROLLS





5 tiger shrimp


1 mango


6 slices cucumber


shredded cabbage, as desired


mayonnaise, as desired





Blanch shrimp in boiling water until fully cooked. Cover with ice water for 5 minutes. Remove shell, leaving head and tail in place. Set aside.


Peel mango and slice thinly. Place shrimp in center and wrap up. Arrange on serving dish lined with shredded cabbage and cucumber slices.





Top with mayonnaise as desired.
Chopped Mango %26amp; Cucumber


Makes 4 servings.


Ingredients





Dressing





1/8 - cup fresh lime juice





1 - tablespoon honey





2 - teaspoons sherry vinegar or red-wine vinegar





1/2 - teaspoon garlic, minced





1/8 - cup olive oil





1/4 - teaspoon salt





1/8 - teaspoon pepper





Salad





1 - cup cucumbers, sliced, peeled and remove seeds





1 - Mango, pitted, peeled, and coarsely chopped





1-1/2 - cups cabbage, sliced crosswise





1/2 - head romaine lettuce





Directions


Dressing





In a small bowl, you want to add the lime juice, honey, vinegar and garlic.


Whisk about 3 times.


Then slowly drizzle in olive oil and continue to whisk until blended.


Finally, add the salt and pepper.


Salad





In a salad bowl, you want to add cucumbers, mangoes, cabbage, lettuce, and dressing.


Toss salad ingredients together and serve.


Picnicking %26amp; Tailgating:





You can make the dressing ahead of time. Place in a plastic container and add to your ice chest. Put you cucumbers, Mango, cabbage, and lettuce in a large storage bag and seal. At the picnic or tailgate site, add the dressing to the cucumber mixture and toss. Take from bag and put in paper salad bowls and enjoy.
I dont know of a recipe but it sounds good enough be DARING!! Just try it mix some lettuces, and veggies together add some mango. And invite me over to try it with you lol.
