Ingredients:
2 gherkins
1 sweet peppers
1/2 onion
175 Feta cheese
500g cherry tomatoes
125g black olive
Method:
1. Rinse gherkins, halve vertically, remove seeds and out into 2 cm cubes.
2. Halve sweet pepper, remove seeds, and dice.
3. Strip off onion skin and dice. Dice Feta cheese; rinse and halve cherry tomatoes.
4. Place gherkins, sweet peppers, onion and cherry tomatoes in salad bowl, drip with dressing to stir well, fold into cheese and black olives. Set aside for 1/2 hour until absorbed and serve.
Herbs with Red Wine Dressing:
Ingredients:
1 tbsp minced parsley
1 tbsp minced mint
1 tbsp minced oregano
90c.c. olive oil
30c.c. red wine vinegar
Salt %26amp; pepper as needed
Method: 1. Stir olive oil and vinegar well, fold into minced fresh herbs, finally add salt and pepper to taste.
What is an Easy Greek Salad recipe?
Greek Salad
INGREDIENTS
3 roma (plum) tomatoes, chopped
1 green bell pepper, sliced
1 small English cucumber, chopped
1 small onion, chopped
1/4 cup sliced black olives (optional)
2 ounces tomato basil feta cheese, crumbled
1/4 cup olive oil
1 teaspoon red wine vinegar
1 teaspoon lemon juice
1 clove garlic, minced
1/2 teaspoon dried oregano
salt and pepper to taste
DIRECTIONS
In a salad bowl, combine the tomatoes, bell pepper, cucumber, onion and olives.
Whisk together the oil, vinegar, lemon juice, garlic, oregano, salt and pepper. Let sit for 1 hour, occasionally stirring to blend flavors.
Pour dressing over salad, add feta cheese and toss before serving.
It's up to you to figure out how much salad you want to make at any given time, so I won't give you ingredient amounts.
Tomatoes, sliced to bite size
English cucumber, sliced to bite size
Red onion, thinly sliced (1/8 inch) and cut across layers so that pieces are about 1 inch long.
Put all ingredients in a bowl and add olive oil and oregano. Mix and refrigerate for about 20 minutes.
Then add fresh squeezed lemon juice, a little more oil and oregano and mix.
Add feta cheese over the top and serve.
NOTE: It is really important to refrigerate at the beginning to allow the oil to bring out the flavour of the oregano. It's up to you to figure out the best oil/lemon juice combination. It will take a few tries.
Never use Real Lemon or the like - always fresh squeezed lemon juice.
Peel and cut a cucumber into pieces; cut up about 2 fresh tomatoes; cut up about 1/4 onion .... mix with feta cheese, kalamata olives and Greek Salad dressing
