Please Help!... Anyone have the recipe for ';Rory Emerald Waldorf Salad?'; Similar or substitute recipe okay.

I am a former chef and all Waldorf salad contains apples, celery, white or red grape (seedless), walnuts (toasted), and a acidified whipped cream dressing. I mix all the ingredients, now with the apples I peel them but that is up to you, and give them a bath in a bit of water and lemon juice to keep them from browning.





You can assemble the ingredients and at the last moment mix them, this prevents it getting soggy, I mix a bit of mayo, lemon juice, a bit of sugar with prepared whipped cream and this is up to you to, real or a non-dairy topping, lemon juice, 1/2 teaspoon of sugar or honey and 1 good spoon of mayo, mix the apples, celery and grapes in a bowl and at the end sprinkle the walnuts over it, chilled for 10=15 minutes, serve it on lettuce leaves or cups with a slice of apple and a grape for decoration.





It is one of these salads were it is good for one serving, it does not keep well, I have made this in a number of hotels I was a sous chef with, it can be done all ahead of time and then assembled at dinner time, even get the garnishes and lettuce ready.





Waldorf salad was invented at the Waldorf Astoria Hotel in the US around the turn of the century.Please Help!... Anyone have the recipe for ';Rory Emerald Waldorf Salad?'; Similar or substitute recipe okay.

What You Need


3 Granny Smith apples, cored


3 Red Delicious apples, cored 2 cups mayonnaise


1/4 cup white sugar


3 tablespoons lemon juice


3 tablespoons orange juice


2 cups whipped cream


6 stalks celery, finely diced


1 cup golden raisins








What You Do


Dice apples with skin still on. Place in a bowl of water with a little lemon juice to keep them from turning brown.


In a large bowl, whisk together the mayonnaise, sugar, lemon juice and orange juice. Fold in the whipped cream.


Drain the apples and add to the mayonnaise mixture, along with the celery and raisins. Stir until ingredients are evenly coated.
I have no idea who Rory Emerald is, but this is a great Waldorf Salad recipe.





1/2 cup chopped, slightly toasted walnuts


1/2 cup celery, thinly sliced


1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins)


1 sweet apple, cored and chopped


3 Tbsp mayonnaise


1 Tbsp fresh lemon juice


Salt


Pepper


Lettuce





In a medium sized bowl, whisk together the mayonnaise (or yogurt) and the lemon juice. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce.





Serves 2.
