I have been looking online and they are simple but they call for dressing... Exactly what kind???Easy carrot raisin salad recipe??
Ok ?I have a healthy version- it's really good. They used to make it at a health food store I worked at in the deli and it was always a hit. And its so simple.
Shredded carrots
Pineapple juice
Raisins
Shredded coconut (unsweetened)
Soak the raisins in the pinapple juice for an hour or so. But if you don't have the time, soak them as long as you can. Then stir everything together. (I don't know the ratios, but you know.. more carrots than anything else, and you can't ever have enough pineapple juice).Easy carrot raisin salad recipe??
3 cups shredded carrots
1/2 cup raisins
1/3 to 1/2 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon brown sugar
Dash salt
Optional: 1 cup chopped apple, or well drained crushed pineapple, or 1/2 cup chopped celery
You can shred the carrots in a food processor, or by hand using a cheese shredder. It usually takes about 5 or 6 carrots to make 3 cups, but measure it as you go along, to be sure. A little more carrot is preferable to a little less. While the carrots are shredding, soak the raisins in a cereal bowl of warm tap water. This plumps them up so they taste better in the salad. After soaking for a few minutes drain them and squeeze them dry with your hand. In a medium sized mixing bowl, combine the shredded carrots, raisins, mayonnaise, lemon juice, sugar, and salt. Add one or more of the optional ingredients if you feel so inspired. Mix it all up and chill it until serving time. This is good to serve up with hot foods in the winter time when you need a cold salad to balance out the menu. If this recipe makes too much, you may cut it in half or thirds.

Carrot Raisin Salad

* mayonnaise or French dressing

PREPARATION:

INGREDIENTS:
* 3 cups shredded carrots
* 1/4 plus 1 tablespoon mayonaise
* 1/2 cup raisins
* 1 teaspoon lemon juice
* 1/4 cup toasted, slivered almonds
PREPARATION:
Combine shredded carrots and raisins in medium bowl. Add mayo and mix well. Stir in toasted almonds. Mix in lemon juice and refrigerate for 2-3 hours prior to serving.

Mix all ingredients, reserve a few peanuts to dress up the top.
Try doing it with a waldorf salad, this has a mayo based dressing by the apples, walnuts and raisins will go nicely with some grated carrot.
When they are saying ';salad Dressing'; they mean something like Miracle Whip. It just depends if you like a sweeter or less sweet ';Hellman's'; Mayonnaise.

Combine the carrots, raisins, yogurt, mayonnaise, honey and cinnamon if desired in a small bowl. Chill for several hours or overnight. Serve in a lettuce-lined bowl.
