TAFFY APPLE SALAD
1 tablespoon flour
1/2 cup white sugar
2 tablespoons instant tapioca
2 tablespoons cider vinegar 1 (8-ounce) can crushed pineapple, juice
reserved
4 apples, cored and chopped
2 cups unsalted peanuts
1 (8 ounce) container whipped topping
In a medium saucepan, stir together the flour, sugar, tapioca,
vinegar and the reserved pineapple juice. Cook over medium heat, stirring constantly, until thick. Remove from heat and chill. In a large bowl, combine the pineapple, apples, peanuts and chilled tapioca mixture. Fold in the whipped topping and chill for at least one hour before serving. Taffy Apple Salad:

1/2 cup brown sugar
1 tablespoon cornstarch
2 tablespoons lemon juice
1 egg, beaten
1 (20 ounce) can pineapple tidbits, drained (save the juice)
1 (8 ounce) carton frozen whipped topping, thawed
5 medium-size golden delicious apples, peeled,cored and diced
2 cups miniature marshmallows
1 cup salted peanuts, chopped (optional)
1. In a small, heavy saucepan, combine brown sugar, cornstarch, lemon juice, egg and pineapple juice.
2. Cook over low heat, stirring constantly, until thickened, about 10 minutes.
3. Refrigerate for 1 hour.
4. In a medium bowl, fold chilled lemon-egg mixture into whipped topping until blended.
5. In a large bowl, combine pineapple, apples, marshmallows and peanuts.
6. Stir in topping mixture.

Here are a few variations I often use.
Apple salad.
2 red,2 green, and 2 yellow apples, cored and diced
1 8oz thawed cool whip
5 chopped Baby Ruth bars, chopped
Snicker Salad
1 (5oz)pkg instant vanilla pudding
1 c milk
1 (12oz) thawed container cool-whip
6 apples, peeled, cored and diced
6 snicker bars, chilled and sliced
1/4 c. seedless grapes
Taffy Apple Salad
8-10 servings 40 min 30 min prep
1 (20 ounce) can crushed pineapple
1/2 cup sugar
1 egg
1 (8 ounce) container Cool Whip
1 1/2 cups chopped peanuts
2 cups miniature marshmallows
1 1/2 tablespoons flour
1 1/2 tablespoons vinegar
2 cups apples (peeled and chopped)
Drain pineapple (reserve juice).
Combine sugar, pineapple juice, flour, egg and vinegar.
Cook until thick using a wire whisk to stir.
Cool slightly and combine with pineapple and marshmallows.
Refrigerate overnight.
Combine pineapple mixture with Cool Whip, apples and nuts.
Chill and enjoy!
It really does taste like a taffy apple!

DIRECTIONS
In a medium saucepan combine the flour, sugar, egg yolk, vinegar and reserved pineapple juice. Cook over medium heat until thick. Remove from heat and chill.
in a large bowl combine the pineapple, apples, peanuts and chilled cooked mixture. Fold in whipped topping and chill for at least 1 hour before serving.
