I love broccoli and am not much of a cook so do you have a broccoli salad recipe I can make?
Broccoli Salad


1 large head broccoli, broken into small flowerettes


1 medium onion or about 1/2 cup chopped onion


8 to 10 slices bacon


1 cup mayonnaise


1/4 to 1/2 cup. sugar


2 to 3 tbsp. vinegar


1/2 cup. raisins


1/2 cup nuts (optional)


Cut bacon into bits and fry crisp. Mix together mayonnaise, sugar, vinegar, bacon and raisins(if using). Pour over broccoli and onions. Mix well. Let stand at least 1 hour or more before serving.

BROCCOLI SALAD


INGREDIENTS.....


8 slices bacon


2 heads fresh broccoli, chopped


1 1/2 cups sharp Cheddar cheese, shredded


1/2 large red onion, chopped


1/4 cup red wine vinegar


1/8 cup white sugar


2 teaspoons ground black pepper


1 teaspoon salt


2/3 cup mayonnaise


1 teaspoon fresh lemon juice


1 cup sunflower seeds, sliced almonds or sesame seeds ( optional )


1/2 cup raisins ( optional )


DIRECTIONS


Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.


In a large bowl, combine broccoli, cheese, bacon and onion.


Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad, add nuts and raisins. Cover, and refrigerate until ready to serve.





CHINESE BROCCOLI SALAD


INGREDIENTS.......


2 heads fresh broccoli


2 tablespoons vegetable oil


1 tablespoon salt


2 tablespoons light soy sauce


2 tablespoons distilled white vinegar


2 tablespoons sesame oil


1/4 teaspoon salt


1 tablespoon white sugar


DIRECTIONS


Separate broccoli into bite-sized florets. Peel tough skin off stem and quarter it into 2 inch pieces cut slantwise.


Bring 2 1/2 quarts water, 2 tablespoons oil and 1 tablespoon salt to boil. Add broccoli and boil quickly for 1 minute; plunge into cold water to set color; drain and place on platter or in a bowl.


In a small bowl combine soy sauce, vinegar, sesame oil, 1/4 teaspoon salt and sugar. Pour mixture over broccoli, toss. This salad can be served hot or cold, your choice!

I use almost the same as the first recipe, omitting the raisins and nuts. I use red onions and red wine vinegar and put some seeded roma tomatoes in it and just a tablespoon or so of ranch dressing. The first one sounds yummy too. I'll have to try that one.
