I'm in need of a healthy, easy salad that is not your typical salad recipe.?

Steak and Potato Salad --











INGREDIENTS


2 pounds boneless sirloin steak(1 inch thick)


1/2 cup cider or red wine vinegar


1/4 cup olive or vegetable oil


1/4 cup soy sauce


6 cups cubed cooked potatoes


1 cup diced green pepper


1/3 cup chopped green onions


1/4 cup minced fresh parsley


1/2 cup Caesar salad dressing


Lettuce Leaves











DIRECTIONS


Place steak in a large resealable plastic bag or shallow glass container. Combine vinegar, oil and soy sauce; pour over the steak. Cover and refrigerate for 1 hour or overnight. drain, discarding marinade. Grill or broil steak for 8-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees F; medium, 160 degrees F; well-done, 170 degrees F). Slice into thin strips across the grain and place in a bowl. Add potatoes, green pepper, onions, parsley and dressing; toss to coat. Serve on lettuce if desired.

Strawberry Spinach Salad --











INGREDIENTS


2 tablespoons sesame seeds


1 tablespoon poppy seeds


1/2 cup white sugar


1/2 cup olive oil


1/4 cup distilled white vinegar


1/4 teaspoon paprika


1/4 teaspoon Worcestershire sauce


1 tablespoon minced onion


10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces


1 quart strawberries - cleaned, hulled and sliced


1/4 cup almonds, blanched and slivered











DIRECTIONS


In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.


In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving. I'm in need of a healthy, easy salad that is not your typical salad recipe.?

I love this recipe. Sicilian Tuna %26amp; Brown Rice over Baby Spinach





Make 1.5 cups of instant brown rice according to package.





In another bowl, add tuna (or don't) with 2 tbsp lemon juice, 1 tbsp or more of mustard (dijon is good), and 1 tbsp of olive oil. I usually make double the sauce for more flavor.





Then, add to tuna mix pretty much anything you have in your frig. I enjoy Craisins, green olives or pimentos, pine nuts, black beans, roasted red pepper, feta, spinach, apple pieces, etc.





Stir tuna mix with rice, make sure it's at room temp or colder or it might taste different.





I don't add all of this but I have mixed it with the rice and tuna and it's all good. Place over spinach and save the rest for later salads
Black Bean Salad


Serves: 8


2 Large Cans Black Beans


1 Can White Corn


4 Plum Tomatoes


1 Medium Red Onion


1/2 Green Pepper


Handful Fresh Cilantro Or 1/2 Tablespoon Dried Cilantro


1/2 Tablespoon Salt


1/4 Cup Balsamic Vinegar


1 Tablespoon Olive Oil


2 Chipotle Peppers


1/2 Tablespoon Minced Garlic





Drain and rinse black beans.





Drain white corn.





Dice red onion, green pepper, chipotle peppers, plum tomatoes.





Chop cilantro.





Mix together. Add salt, olive oil, garlic and vinegar.





Chill, covered at least 4 hours.

goat cheese or feta


a few fried onions for crunch


top with a raspberry vinaigrette



Spinach leaves, pomagranite seeds, feta or blue cheese (just a small sprinkle), toastaed s;iced or slivered almonds. And a balsamic vin.





Yumm!!!
