In a hurry, I like to put together ';Three bean salad';. I go to my cupboard and grab a can of kidney or chili beans, a can of green beans and a can of yellow (wax) beans, drain them and put them into a large bowl with a small diced onion.
For the dressing I mix a half cup sugar and a half cup vinegar with a half cup salad oil and some seasonings ( usually salt, pepper, garlic powder and a tiny bit of basil). Mix all of this together and top with parsley, or dried parsley flakes.

I am really into this arugula salad lately. It is very easy....ok, get arugula, You need a couple of lemons, squeeze the juice from the lemons, add a tiny (very tiny) bit of olive oil and shake well. Drizzle over the arugula, toss in pine nuts and some goat cheese (or parmesan, or feta, any cheese is good!) That is it. You can also vary it by adding dried cranberries, or fresh rasberries....or poached pears, or chopped up pears.....
It is super easy, nice and fresh tasting for summer.
**********3 Bean salad
1 (16-ounce) can dark red kidney beans, drained/rinsed
1 (14.5-ounce) can cut green beans, drained/rinsed
1 (14.5-ounce) can cut golden wax beans, drained/rinsed
1 cup sliced fresh mushrooms
1/2 cup chopped red bell pepper
2 tablespoons minced red onion
1/2 cup vegetable oil
3 tablespoons white wine vinegar
1 tablespoon Dijon mustard
2 tablespoons Greek seasoning
In a medium bowl, combine first 6 ingredients.
In a small bowl, whisk together oil, vinegar, mustard, and Greek seasoning. Pour over bean mixture; cover and chill 4 hours, stirring occasionally.
*********LETTUCE AND EGG SALAD WITH CREAM
DRESSING
1 med. head lettuce
3 hard-cooked eggs
Salt and pepper to taste
1 sm. (5 oz.) can evaporated milk
1/3 c. salad dressing
3 tbsp. sugar
2 tbsp. vinegar
Blend 1/3 cup salad dressing and sugar well, add vinegar, and blend until mixture is smooth. Gradually add evaporated milk until mixture is smooth. Pour over torn lettuce and sliced eggs. Toss until lettuce is covered. Garnish with sliced eggs.
************SPRING PEA SALAD
1 head cauliflower, cut in sm. pieces
1 c. chopped cashews or sunflower seeds
2 tbsp. pimiento
10 oz. frozen peas
1 c. diced celery
1/4 c. crisp cooked bacon, crumbled
DRESSING:
1/2 c. sour cream
1/2 tsp. Dijon mustard
Mix with 1 cup prepared Ranch dressing. Toss, chill and serve.

Ingredients
6 romaine lettuce leaves, torn into 1-1/2-inch pieces
1 medium cucumber, peeled and sliced
1 medium tomato, chopped
1/2 cup sliced red onion
1/3 cup crumbled feta cheese
2 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1. Combine lettuce, cucumber, tomato, onion and cheese in large serving bowl.
2. Whisk together oil, lemon juice, oregano and salt in small bowl. Pour over lettuce mixture; toss until coated. Serve immediately.
romaine, baby lettuce mix, sliced green apples, walnuts, feta cheese, lemon, olive oil, garlic,salt pepper for dressing or romaine lettuce, make a fresh salsa: tomatoes, onions, cilantro, jalapeno, add some fruits, pineapple or watermelon, or nectarines, lemon juice, olive oil, cumin, salt pepper for dressing
1 head iceberg, cleaned and chopped
1 small can ranch style beans, drained
1 can sliced black olives, drained
1 sweet onion, cleaned and chopped
1 ripe tomato, cleaned and diced
1 ripe avocado, cleaned and diced
1 cup grated yellow cheese (I like sharp cheddar)
1-2 cups Fritoes corn chips
Creamy cucumber salad dressing
Mix all together. Serve immediately. It's a balanced meal all by itself since the beans are a 'protein,' the cheese is 'dairy,' the fritoes count as a 'grain' or 'bread' exchange, the lettuce and onion are 'vegetables' and the avocado and tomato are technically FRUITS (not vegetables) b/c they have seeds.

This is a very simple salad that is very tasty:
1 cucumber, peelings on: slice into thin circles
Cherry tomatos: cut in halves or fourths
1/2 purple onion: Slice thin rounds, then cut the rounds in half
Throw all ingredients into a bowl: sprinkle with salt, pepper, any vinegar, olive oil, and basil leaves. Yummy!
1 lettuce, 2 tomatoes, 2 cucumbers, 1 onion, 1 garlic, olive oil, feta cheese(it is greek) or any other cheese and if u like add tuna :)
