Classic Carrot Salad
Ingredients
3-4 cups freshly grated carrots
1/2-1 cup raisins
1 large apple, cored and chopped
1/4 to 1/3 cup mayonnaise
Method
Combine all ingredients in a medium sized bowl.

1 pound carrots, peeled and grated
1/2 cup raisins
1/3 cup mayonnaise, or to taste
1 tablespoon granulated sugar, to taste
1/2 teaspoon salt
black pepper, to taste
Put grated carrots in a large bowl; toss with remaining ingredients. Chill thoroughly before serving.

STIR boiling water into dry gelatin mix in medium bowl at least 2 min. until completely dissolved. Add raisins; stir.
ADD enough ice to orange juice to measure 1-1/4 cups. Stir into gelatin until slightly thickened. Remove any unmelted ice. Gently stir in carrots. Pour into large bowl or four individual serving dishes.
REFRIGERATE 2 hours or until firm. Store leftover salad in refrigerator.

Yeah its really easy and healthy and you can make tons of variations.
You need:
about 4-6 carrots
1 Apple
Lettuce (preferably iceberg)
1 cup of Pine Nuts
2-3 cups of raisins
Olive Oil
Lemon Juice
Pepper
Wash the lettuce. Dont cut it but instead tear off whole leaves. Next peal then grate the carrots and apple reasonably finley. If theres too much or too little just adjust it to your taste. Add this to the lettuce. Lightly fry the pine nuts in either olive oil or sunflower oil until lightly browned. Add these to the salad. Add the raisins. Toss the ingredients together.
In a cup squeeze the juice of a whole lemon and several tablespoons of olive oil. Mix these together. Add the dressing to the salad. Add pepper to taste.
Wahay you just made a crazy cool salad.
If you want to make it into more of a meal you can fry some lean chicken in sesame seed. Cut it into small chunks and toss with the rest of the ingredients.
CARROT-RAISIN SALAD
6 to 8 med. carrots, finely shredded (about 4 c.)
2/3 c. raisins
1/2 tsp. salt
COOKED SALAD DRESSING:
1/4 c. all-purpose flour
2 tbsp. sugar
1 tsp. salt
1 tsp. dry mustard
1 1/2 c. milk
2 egg yolks, slightly beaten
1/3 c. vinegar
1 tbsp. butter
Mix carrots, raisins and salt. Add just enough cooked salad dressing to moisten; toss. Spoon into lettuce cups. 8 to 10 servings.
SALAD DRESSING: Mix flour, sugar, salt and mustard in 2-quart saucepan. Stir in milk gradually. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute. Stir at least half of hot mixture into egg yolks gradually. Blend into hot mixture in saucepan. Boil and stir 1 minute. Remove from heat; stir in vinegar and butter. Cool slightly; refrigerate. Makes about 2 cups dressing.
yes, i like to add about 1 cup of plain yogurt and about 1/3 of a cup of mayonnaise. i also add diced apples and walnuts for some differnet textures
