TGI FRIDAY'S PECAN-CRUSTED CHICKEN SALAD





CHICKEN:


4 (4 ounce) chicken breasts


3 cups chopped pecans


2 cups flour, divided


3 large eggs


1 ounce milk


GLAZED PECANS:


1 cup chopped pecans


1/4 cup dark brown sugar


1 tablespoon water


SALAD:


1 head romaine lettuce


1/4 cup balsamic vinaigrette dressing


1 can mandarin oranges


1/2 cup craisins (dried cranberries)





CHICKEN BREASTS:


Preheat oven to 350 degrees F.





Mix 2 cups pecans with 1 cup flour and pulsate in Cuisinart or robot coupe. Place remaining 1 cup flour in one bowl. Place pecan flour in a second bowl.





Mix eggs and milk for batter place in a third bowl.





Coat chicken first in flour, then in egg batter and third in pecan flour.





Saute chicken breasts in vegetable oil over medium heat until browned on both sides.





Bake chicken breasts in oven at 350 degrees F for 7 to 8 minutes or until fully cooked, cool and slice.





GLAZED PECANS:


Mix chopped pecans with brown sugar and water in a skillet. Heat until pecans are glazed; set aside.





TO ASSEMBLE SALADS:


Toss romaine lettuce with glazed pecans, balsamic vinaigrette, mandarin oranges, craisins and bleu cheese crumbles. Portion salad onto two salad plates. Top with sliced chicken.





Yield: 2 salads

    This is the salad dressing recipe I mostly use for Bon Bon Chicken, a Szechuan appetizer, shredded chicken top on rice noodle salad (steamed chicken + cucumber slices+ rice thick noodle or bean thread sheets)

    1 tablespoon sesame oil


    1 teaspoon of fresh garlic (chopped finely)


    1 teaspoon chili oil (optional)


    1 tablespoon soy sauce


    1 tablespoon rice vinegar


    1 teaspoon sugar


    2 tablespoons sesame paste (or peanut butter)


    1/2 teaspoon roasted white sesame seed (as garnish)





    Mix all ingredient well and pour on salad, sprinkle sesame seed on top. (You may add more sesame paste to thicken the dressing)





    Here is another one which I use for roasted chicken salad (roasted chicken, lettuce, cherry tomatoes)

    a pinch of salt


    1 teaspoon of sugar


    1 teaspoon ground peppercorn


    1 tablespoon of sherry, cooking wine


    2 teaspoon of sesame oil





    1) Heat frying pan or wok on low heat, add sesame oil and stir fry garlic %26amp; ginger till golden, add all other ingredients into the pan / wok. Bring to boil. Remove from heat. Let it cool.


    2) Serve dressing at the table with warm roasted chicken pieces top on bed of lettuce and garnish with cherry tomatoes.I need a dressing recipe for chinese chicken salad!?
    Chinese Chicken Salad Dressing





    1 cup Granulated sugar


    1 cup Water


    1/4 cup Rice Wine Vinegar (or to taste)


    Water


    1 x Sweet Pickled Ginger, as much as you like (See Note)





    Note:


    ( I used ';pink';, thinly sliced sweet pickled ginger).


    Place the sugar and water into a saucepan. Bring to a boil and boil until the sugar is completely dissolved. The mixture will be hot at this point. I added the pickled ginger at this point. Let the mixture cool to room temperature.


    Pour in the rice wine vinegar (I only had the seasoned-which is sweet-probably would be better off using the unseasoned). Add the vinegar and taste. Keep adding vinegar until it's as tart/sweet as you like. If the dressing is too strong, add a little water and taste. Keep adding the water until it's what you remember from your favorite Chinese restaurant. Refrigerate overnight to let the flavors blend.

    HAITIAN CARROT SALAD





    For the salad:


    4 potatoes, peeled and cubed


    1 carrot, peeled and minced

    1 small beet


    2 eggs


    1/2 cup sweet peas

    2 cloves garlic


    1/3 cup red bell pepper diced + 4 whole peppers for





    presentation


    1 avocado


    1 mango


    2 tomatoes diced


    1 head iceberg lettuce, shredded

    Prepare the salad:





    Boil potatoes and carrot in water with 1 teaspoon salt for 10 minutes or until tender.





    Boil beet separately in water with 1 teaspoon salt until tender, then peel and mince.





    Boil eggs separately in water with 录 teaspoon salt until hard.





    In a bowl, place cubed potatoes, beet, sweet peas, carrots, onion, vinegar, red and green bell peppers, garlic, avocado, tomatoes, mango and lettuce and mix with mayonnaise. Add black pepper.





    On an open flame roast the peppers quickly to blister the skin a bit. Cut the tops off and hollow out the cavity. Fill the peppers with the salad and serve.

    I am a former chef and all Waldorf salad contains apples, celery, white or red grape (seedless), walnuts (toasted), and a acidified whipped cream dressing. I mix all the ingredients, now with the apples I peel them but that is up to you, and give them a bath in a bit of water and lemon juice to keep them from browning.





    You can assemble the ingredients and at the last moment mix them, this prevents it getting soggy, I mix a bit of mayo, lemon juice, a bit of sugar with prepared whipped cream and this is up to you to, real or a non-dairy topping, lemon juice, 1/2 teaspoon of sugar or honey and 1 good spoon of mayo, mix the apples, celery and grapes in a bowl and at the end sprinkle the walnuts over it, chilled for 10=15 minutes, serve it on lettuce leaves or cups with a slice of apple and a grape for decoration.





    It is one of these salads were it is good for one serving, it does not keep well, I have made this in a number of hotels I was a sous chef with, it can be done all ahead of time and then assembled at dinner time, even get the garnishes and lettuce ready.

    What You Need


    3 Granny Smith apples, cored


    3 Red Delicious apples, cored 2 cups mayonnaise


    1/4 cup white sugar


    3 tablespoons lemon juice


    3 tablespoons orange juice


    2 cups whipped cream


    6 stalks celery, finely diced


    1 cup golden raisins








    What You Do


    Dice apples with skin still on. Place in a bowl of water with a little lemon juice to keep them from turning brown.


    In a large bowl, whisk together the mayonnaise, sugar, lemon juice and orange juice. Fold in the whipped cream.


    Drain the apples and add to the mayonnaise mixture, along with the celery and raisins. Stir until ingredients are evenly coated.
    I have no idea who Rory Emerald is, but this is a great Waldorf Salad recipe.





    1/2 cup chopped, slightly toasted walnuts


    1/2 cup celery, thinly sliced


    1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins)


    1 sweet apple, cored and chopped

    Chicken Ni莽oise Salad





    Ingredients:


    12 cups loosely packed fresh spinach leaves


    2 boneless, skinless chicken breasts, grilled and sliced


    1/2 pound fresh whole green beans, cooked and chilled


    8 small red potatoes, cooked, quartered and chilled


    12 cherry tomatoes, halved


    2 hard boiled eggs, sliced


    2 (6 ounce) jars marinated artichoke hearts





    Dressing:


    1 tablespoon capers


    1/4 cup Kalamata olives


    2 tablespoons balsamic vinegar


    1 tablespoon anchovy paste


    1 tablespoon Dijon-style mustard


    3 cloves garlic, minced





    Drain artichoke hearts and reserve liquid. Remove pits from Kalamata olives and slice. Combine reserved artichoke liquid, sliced kalamata olives and remaining dressing ingredients in a container with a tight fitting lid. Shake well and refrigerate at least 2 hours.





    Arrange 2 cups spinach leaves on 6 plates. Divide ingredients and arrange chicken, green beans, potatoes, tomatoes, sliced egg and artichoke hearts separately on top of the spinach. Drizzle with dressing and serve.

    Walnut-Cheese Spinach Salad


    INGREDIENTS


    2 cups fresh raspberries


    1/3 cup sugar


    1/3 cup vegetable oil


    2 tablespoons white wine vinegar or cider vinegar


    1/4 teaspoon Worcestershire sauce


    1 (6 ounce) package fresh baby spinach


    1 small red onion, thinly sliced, pulled into rings

    OLIVE GARDEN SALAD DRESSING


    Yield: 1 Recipe





    1 1/2 c Bottled Italian dressing


    2 tb Parmesan; grated


    2 tb Sugar or equivalent in


    -Equal


    1 lg Raw egg; or egg beaters

    Blend in blender on high speed 1/2 minute or until smooth. Pour this

    Here are a couple unusual potato salad recipes you might like





    SWISS AND CHEDDAR POTATO SALAD





    3 pounds (7 1/2 cups) potatoes, pared, cooked %26amp; cooled


    2 hard-cooked eggs, coarsely chopped


    1 hard-cooked egg, sliced, for garnish


    1 1/2 cups finely shredded Swiss cheese


    3/4 cup finely shredded Cheddar cheese


    1/3 cup sliced green onions and tops


    1/2 cup finely chopped celery


    2 1/4 cups mayonnaise or salad dressing


    4 tablespoons milk


    1/4 teaspoon salt


    1/2 teaspoon pepper


    parsley sprigs, for garnish


    *1/4 - 1/2 cup pimento stuffed green olives, to bring out flavor of Swiss cheese, if desired.





    Cut potatoes into 1/2 inch cubes. Combine potatoes, chopped eggs, cheese and green onions in large bowl. Mix mayonnaise, milk, salt and pepper; pour over potato mixture and toss.


    Refrigerate several hours for flavors to blend. Spoon into serving bowl; garnish with egg slices, parsley, and a few green olives if desired.








    BACON POTATO SALAD





    6 medium potatoes


    1/2 large red onion


    Cheddar cheese (as desired)


    Pepper Jack cheese (as desired)


    6 large pieces bacon, crumbled


    6 tablespoons mayonnaise


    1 tablespoon mustard


    1 tablespoon Thousand Island


    1 tablespoon Ranch


    1 tablespoon honey barbeque sauce





    Boil potatoes until soft. Cut into slices and mix together with mayonnaise.


    Stir in the mustard, barbeque sauce, Ranch and Thousand Island.





    Chill for 1 1/2 hours, and then add the cheese and crumbled bacon. Sprinkle with salt, pepper and garlic salt. Add paprika for decoration.Potato salad....I don't care for it. Do you have a recipe that would actually taste good?
    You should try hot German potato salad. My mom used to make it all the time when I was growing up and I love it! It's lighter than the cold version with mayo, but it has bacon in it and a super yummy, tangy vinegar and mustard dressing. Try it!

    Mexican Red Potato Salad with Avocado and Red Pepper


    Yield: 4


    Ingredients:


    Potatoes


    2 pounds red new potatoes, cut into quarters





    Dressing


    2 tbsp mayonnaise (30 ml)


    2 tsp Dijon mustard (10 ml)


    1/4 cup sour cream (60 ml)


    juice of 1 lime


    handful fresh cilantro, chopped


    Coarse salt and freshly cracked black pepper, to taste


    Assembly


    1 avocado, peeled and diced


    2 green onions, sliced


    1 jalapeno pepper, minced


    1 red pepper, diced


    Extra virgin olive, for drizzling over salad, optional





    Directions:


    Potatoes


    Cover potatoes with water to cover by 1-inch. Salt water generously. Bring to a boil and simmer for about 15 to 20 minutes or until fork tender. Drain well. Transfer potatoes to a large bowl. Let potatoes cool to room temperature before using in the salad.


    Dressing


    Add the mayonnaise, Dijon mustard, sour cream and lime juice to a small bowl. Whisk to combine. Add cilantro and season with salt and pepper. Set aside.


    Assembly


    Add avocadoes, green onion, jalapeno and red pepper to the potatoes in a large bowl. Gently toss the potatoes with the dressing to evenly coat. Season to taste.
    My mom just dumps 1/2 jar of Miricle Whip into the potatos, chopped onions and eggs, then sprinkles it with Paprika, it's really good!
    I despised potato salad growing up until a few years back when I was asked to fix it for a party. Rather than admit I'd never tasted it, I got a bottle of wine, hit the kitchen %26amp; came up with a potato salad that I love!!





    Take small red potatos %26amp; cut in half, then bring to a boil in a saucepan with a couple of cloves of garlic %26amp; some dried onions (I'm allergic to raw onions to I had to improvise). Drain %26amp; cool, then place in large bowl. Add mayo, mustard, horseradish, sliced boiled egg, celery seed %26amp; pickle relish is optional. Stir together, then chill well before serving. Garnish with sliced green olives %26amp; paprika......It is sure to be a hit!
    Add your own particular herbs and spices to liven it up from Lawry's Seasoning Salt, to thyme, oregano, paprika, etc.... Your potatoes of course, add carrots, green bell pepper, onions, boiled eggs, celery, relish, it must be Hellman's Mayonnaise, and a little bit of mustard for color.





    The amounts may vary depending upon your personal tastes. Find an ethnic (black usually) person whose tastes you trust. We get real particular, ignorant, and sometimes rude, when it comes to potato salad. If it doesn't even look right we won't eat it; and you may get a few lude comments. My mother makes the best. I find that may people make their potato salad rather bland and blah but because they haven't had better and they don't know it. I hope you have luck.
    Most of the time, people do not like potato salad because of the sulfur taste of the over-cooked eggs. The secret to perfect hard cooked eggs: cover eggs with cold water. cover pan, set on cold unit and heat to rolling boil, turn OFF heat and let stand for 20 min. Remove from stove. IMMEDIATELY pour off hot water and pour on cold water. replace cold water until the eggs are completely cool.





    8 red potatoes cooked in skins, more firm to a fork inserted than you would want for mashed or baked potatoes. Cool, remove skins, cut into 1/2 in cubes. Toss with enough zesty italian dressing to coat the potato cubes, chill overnight or over two hours.





    Secret to good potato salad is to chop the vegetables VERY fine. I use celery, green onion including the stems, and red radishes. cucumbers if you like them, I don't like them in my potato salad. Add to the chilled potatoes, tossing with a fork.





    Peeling 3 hard cooked eggs, I remove the yolk. chop the egg white and add to the potatoes. finely mash egg yolks, mixing with 1/2 cup MIRACLE WHIP ( or mayonnaise if you prefer) 1 Tblsp. prepared mustard, and 1/4 cup finely chopped SWEET pickles, plus 1/4 c. of the pickle juice. ( I use a blender to make this dressing) adding a little milk if needed to make a good consistency. Stir together with vegetables, salt and pepper to taste, with a wooden spoon.





    If desired, top with sliced hard-cooked eggs and paprika for color.

    Red Skin Potato Salad


    1 cup mayonnaise


    2 Tbsp red wine vinegar


    1/2 Tbsp salt


    1 tsp sugar


    1/4 tsp pepper


    1 cup sliced celery


    1/2 cup chopped onion


    2 chopped hard boiled eggs


    4 Tbsp parsley


    1 tsp paprika


    2 Tbsp Dijon mustard


    5-6 medium red skin potatoes





    Boil potatoes until cooked through.





    In the meantime, stir together all other ingredients. Allow the potatoes to cool just enough to handle them. Cut them into about 1 inch chunks and stir into bowl containing the other ingredients. Cover and refrigerate. Makes 5 or 6 cups.

    Serves: 8-12





    1 lb. bacon - fried, crumbled, grease reserved


    9 med. potatoes - peeled, sliced, boiled until tender


    1 lrg. onion - sliced thin


    1/2 cup all-purpose flour


    2 1/4 cups water


    1 1/4 cups distilled white vinegar


    1/2 cup granulated sugar


    -Toss together crumbled bacon, potatoes, and onion in a bowl; set aside.


    -Melt bacon grease in saucepan over medium-high heat; stir in flour; slowly whisk in water and vinegar; stir in sugar; continue cooking, stirring constantly, until thickened.


    -Pour hot mixture over potatoes in the bowl.


    -Serve hot.
    Try different dressings. There are so many available, there must be one you will like.
    I use potatoes, onions, dill pickles, mayo, a little mustard, salt, pepper, garlic powder, dill, and a combination of pickle juice and vinegar (I like my potato salad sour)

    Try this :80g sliced pepperon1, 1.2 kg baked potatoes, quartered, 70g drained sundried tomatoes sliced, 2 tbl pine nuts toasted, For the dressing 2 ways,


    1st : 3 egg yolks, 2 cloves crushed garlic, 2 tbl lemon juice, 3/4 cup oil, 1/2 cup firmly packed shredded fresh basil - beat yolks, garlic and juice in bowl until smooth, gradually add oil a little at a tiime, beating constantly until oil is combined then stir in basil.

    Baked Potato Salad


    8 medium potatoes, sliced


    1/2 pound sliced bacon


    1 pound processed American cheese, sliced


    1/2 onion, chopped


    1 cup mayonnaise


    salt and pepper to taste


    1/4 cup black olives, sliced





    DIRECTIONS


    Preheat oven to 325 degrees F (165 degrees C). Butter a 9x13 inch baking dish.


    Put sliced potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook until tender but still firm, about 10 minutes. Drain, and set aside.


    At the same time, place bacon in a large deep skillet. Cook over medium-high heat until evenly browned. Remove to paper towels to drain.


    In a large bowl, stir together the potatoes, cheese, onion, mayonnaise, salt, and pepper. Spoon into prepared baking dish. Crumble bacon over the top, and sprinkle with olives.

    Well I don't have exact measurements because I rarely cook with measurements- only when I do baked goods.





    Frozen OBrien potatoes- these are the ones with onions and peppers already in it.





    Cream of mushroom soup





    Sourcream





    Black Olives





    Can of diced mild green chilis





    cheddar cheese shredded





    Salt and pepper to taste





    I add in a large sauce pan- cream of mushroom soup, sourcream, olives, green chilis, salt and pepper and a little milk to make it to the consistency of pouring.





    Once bubbly I remove and add the hot mixture to the frozen potatoes in a buttered casserole dish. Stir to mic. Add cheese on top and bake.
    8oz cubed Velveeta


    16 oz of shredded cheddar cheese


    1 cup Mayo


    1/2 cup chopped cooked bacon


    1/2 cup sliced green olives.


    MIx together.





    Boil 8 large cubed potatoes


    Pour/spread mayo-Velveeta/cheddar mixture evenly over cooked potatoes in a baking dish. Bake in a 350 degree preheated oven covered for 45 minutes. Uncover and bake 15 minutes to brown cheese at top. Set for 5 minutes.

    Trying to find recipe for Asian Chicken Salad?

    My mom made an salad we think is called Crispy Asian Chicken Salad, maybe crunchy. We Think it was from sounthern living but we aren't sure. It has fried chicken, lettuce (obviously), roasted/burned almonds (i think they're almonds, sesame seeds, and those crispy chineese noodles (not romen) and more stuff i forget. She made it around December 08 if that helps you with a magazine hunt. It also has a salad dressing recipe with it.

    4 cooked chicken breasts


    1 1/2 heads lettuce


    3 green onions, sliced


    1 (3 oz.) can chow mein noodles


    1 (4 oz.) pkg. sliced almonds


    4 tbsp. sugar


    2 tsp. salt


    1/2 tsp. paprika


    4 tbsp. vinegar


    1/2 c. oil





    Cut chicken into bite-sized pieces and toss with the first 5 ingredients. Mix the last 6 ingredients together for the dressing and chill for an hour before serving.





    OR





    ASIAN CHICKEN SALAD





    3 c. cubed, cooked chicken


    1 c. chopped celery


    1 (8 oz.) can sliced water chestnuts, drained


    1 c. mayonnaise


    2 tsp. curry powder


    2 tsp. lemon juice


    2 tsp. soy sauce


    1 (16 oz.) can mandarin orange segments, drained


    1/2 tsp. salt





    In a large bowl combine chicken, celery and water chestnuts. Sprinkle with salt and toss. In small bowl stir mayonnaise, curry powder, lemon juice and soy sauce until smooth. Reserve 5 orange segments for garnish, gently stir remaining oranges into salad. Cover and refrigerate 1 to 24 hours.


    To Serve: Stir salad and transfer to a lettuce lined salad bowl. Garnish with reserved orange segments and water chestnuts if desired.





    OR





    ASIAN CHICKEN SALAD WITH PASTA





    1/2 lb. small shells or other small pasta


    2 c. poached chicken, cut into chunks


    4 oz. spinach leaves, stems removed and sliced into strips


    1/2 c. bean sprouts


    1/2 red bell pepper, cut into strips


    2 scallions, sliced


    1/4 c. slivered almonds, toasted





    DRESSING:





    3 tbsp. red wine vinegar


    1 tbsp. soy sauce


    1 tbsp. sesame or vegetable oil


    2 tsp. teriyaki sauce


    1 1/2 tbsp. prepared chili sauce


    1 tbsp. fresh grated ginger





    Prepare pasta according to package directions; drain. In large mixing bowl, combine pasta, chicken, spinach; sprouts, pepper and scallions. In a small mixing bowl, mix together remaining ingredients except almonds; whisk well. Toss dressing with pasta mixture and refrigerate until ready to serve. Sprinkle almonds over top just before serving. Serves 4.

    For the Dressing


    2 tablespoons light mayonnaise


    1 1/2 tablespoons rice vinegar


    2 teaspoons brown sugar


    1 1/2 teaspoons sesame oil


    1 1/2 teaspoons soy sauce


    1 pinch garlic powder





    For the Salad


    2 boneless skinless chicken breast halves


    5 cups romaine lettuce


    2 cups mixed greens


    5 ounces carrots, shredded


    1 tablespoon sesame seed, toasted, salted


    1 cup canned mandarin oranges, packed in juice and drained


    1/2 cup red cabbage, shredded


    1/2 cup chow mein noodles (optional)


    1/2 cup sliced almonds, roasted (optional)





    Add the dressing ingredients in a mixing bowl and blend with a mixer until combined. Chill before serving.





    As the dressing chills, add chicken breasts to a pot of boiling water. Reduce the heat, cover and simmer for 25 minutes or until cooked.





    Once the chicken is tender and no longer pink, remove from the pot and cut into bite sized pieces.





    Combine chicken and other remaining salad ingredients in a bowl.





    Toss the salad with the dressing and serve.

    3. Just before serving, mix in the chow mein noodles, orange segments and sesame seeds.


    4. Mix/whisk the dressing once again then add in about half; toss to combine (serve the remaining dressing on the side). Serve immediately.

    Garbage Salad & Dressing Recipe?

    Does anyone have the Garbage Salad and Dressing recipe that was used at the Elk's Club in Ocala, Florida? I remember going there in the 60's %26amp; 70's with my grandparents and LOVED this salad.





    It was kind of like a Greek salad (feta cheese sticks out in my memory) but there were no beans or fruit in the salad.

    I don't know the Elk's Club recipe, but I do know of one ';recipe.'; I put that in quotes because SO much of this stuff gets switched out with other stuff, but I'll save that for after. Here's a basic recipe (and it's very close to an Italian cold antipasto salad).





    Garbage Salad





    Serves: 10 to 12





    1 head iceberg lettuce, washed, dried, and cut into bite-sized pieces


    1 head romaine lettuce, washed, dried, and cut into bite-sized pieces


    2 medium tomatoes, cut into bite-sized pieces


    6 slices (1 ounce each) provolone cheese, cut into 2- by 1/4-inch strips


    6 ounces Genoa salami, cut into 2- by 1/4-inch strips


    1 can (14 ounces) hearts of palm, drained and cut into 1-inch pieces


    1 can (14 ounces) artichoke hearts, drained and quartered


    1 jar (7 ounces) roasted red peppers, drained and cut into strips


    1 can (5 3/4 ounces) large pitted black olives, drained


    1 jar (16 ounces) peperoncini, drained


    Garlic Herb Vinaigrette (See Below) or any prepared vinaigrette dressing





    1. In a very large mixing bowl, combine all the ingredients except


    the dressing; toss to mix well.





    2. Pour the dressing over the salad; toss to coat. Serve immediately.





    Here's the dressing they suggest:





    Garlic Herb Vinaigrette


    Yields: about 2 1/4 cups





    1 1/2 cups olive oil


    2/3 cup red wine vinegar


    2 garlic cloves, minced


    1 tablespoon chopped fresh parley


    1 teaspoon dried basil


    1 teaspoon dried thyme


    1 teaspoon dried oregano


    1/2 teaspoon dried chives


    2 teaspoons salt





    In a medium bowl, whisk all the ingredients until well combined. Pour


    over the Garbage Salad or any tossed salad; if not using immediately,


    cover and chill until ready to use, then whisk again just before


    using.





    You could easily switch out some of the Italian meats for Spam (this one is popular in garbage salads!), ham, bacon, or any other meat really! The cheeses can be switched out too, so feel free to add in or sub some of your fondly-remembered feta! I am a big fan of sugar snap peas, sauteed cooled mushrooms, and asparagus in mine. Oh, and if you take this salad somewhere else globally (from Italy to, say France or even China!), you can change up the spices and vinegar/acid in the dressing.

    One of my favorites is Tarragon Egg Salad:





    Adding tarragon to this classic sandwich gives it a little zing. I like to use one egg for each sandwich but you could probably get away with using a little less.





    12 large eggs


    2/3 cup mayonnaise


    2 teaspoons Dijon mustard


    1/2 teaspoon salt


    1/4 teaspoon black pepper


    2 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon


    24 slices white bread





    Place the eggs in a saucepan and add enough cold water to cover them by about 1/2 inch Add a dash of salt. (Egg white solidifies more quickly in hot, salty water than it does in fresh.) Bring the water to boil then reduce the heat to gently simmer the eggs for 10-15 minutes.





    Take the saucepan off the stove and place under cold running water. Let the cold tap run over them for about 1 minute, then leave them in cold water till they're cool enough to handle 鈥?about 2 minutes.





    Peel the shell off the eggs then dice. In a separate bowl, blend the mayonnaise, Dijon mustard, salt, black pepper and tarragon. Add the diced eggs and gently mix.





    To assemble sandwich, spread the egg salad onto 12 slices of bread. Top with another slice of bread then cut off the crusts and cut diagonally.

    You will need:


    2 lbs. boiling potatoes, peeled and halved


    3 tbsp. prepared buttermilk salad dressing


    Pepper


    3 hard cooked eggs, peeled and chopped


    2 lg. dill pickles, chopped


    2 celery stalks, chopped


    1 (3 1/4 oz.) can sliced black olives, drained


    3/4 c. mayonnaise





    And to make it: Cook potatoes in large saucepan of boiling water until tender, about 15 minutes. Drain. Cool. Chop into small pieces. Toss with salad dressing. Season with pepper. Mix in eggs and next 3 ingredients. Add mayonnaise and toss lightly. Cover and refrigerate at least 2 hours. Can be prepared 1 day ahead. 8 servings.

    ok what i do is just boil the potatoes in big chunk. When done i add mustard and hellmans mayonaise then i add big chunks of pickles just cause our family loves pickles i salt and pepper to taste its easy and delicious and i always get rave reviews for it you can add eggs or onions its up to you. good luck.

    INGREDIENTS


    4 eggs


    2 bags (1 lb each) frozen cauliflower florets


    1 bag (10 oz) Cascadian Farm庐 organic frozen peas %26amp; carrots


    1 3/4 cups reduced-fat mayonnaise or salad dressing


    1 teaspoon granulated sugar


    1 teaspoon salt


    1/4 teaspoon pepper


    1/4 teaspoon paprika


    1 tablespoon cider vinegar


    1 teaspoon yellow mustard


    1 cup chopped celery (2 1/2 stalks)


    2/3 cup chopped onion (about 1 medium)





    DIRECTIONS


    1. In 2-quart saucepan, place eggs in single layer; add enough cold water to cover eggs by 1 inch. Cover; heat to boiling. Remove from heat; let stand covered 15 minutes. Drain eggs. Immediately run cold water over eggs until completely cooled. Peel and chop eggs.


    2. Meanwhile, in large (4-quart) microwavable bowl, place frozen cauliflower and frozen peas and carrots; cover with microwavable waxed paper. Microwave on High 20 to 25 minutes, stirring once halfway through microwaving. Drain vegetables in colander; rinse with cold water to cool. Place colander over same large bowl; refrigerate at least 30 minutes or until cooled.


    3. In small bowl, mix mayonnaise, sugar, salt, pepper, 1/8 teaspoon of the paprika, the vinegar and mustard; set aside.


    4. Remove vegetables from refrigerator; discard any liquid in bowl. Pat drained vegetables dry with paper towels; chop any large cauliflower pieces into 3/4-inch chunks to resemble chopped potatoes. Place cauliflower, peas and carrots in same bowl. Add celery, onion and chopped eggs.


    5. Pour mayonnaise mixture over salad; stir until vegetables and eggs are well coated. Sprinkle remaining 1/8 teaspoon paprika over salad. If desired, cover and refrigerate at least 1 hour or until well chilled before serving.
    2 1/2 pounds red potatoes, large diced


    3 tablespoons cider vinegar


    3/4 cup mayonnaise (homemade if possible)


    1 teaspoon mustard powder


    1/4 cup chopped parsley


    1 tablespoon chopped fresh tarragon


    1/2 tablespoon very thinly sliced garlic


    3 tablespoons fine chopped cornichons


    1/2 cup small dice red onion


    1/2 cup thinly sliced celery


    1 teaspoon kosher salt


    1/2 teaspoon freshly ground black pepper





    Place potatoes into a large heavy-bottomed pot. Cover with cold water and place over medium heat. Cover the pot and bring to a boil. Immediately reduce heat and remove lid. Gently simmer until potatoes are fork tender. Drain and place into an ice bath to cool. Remove skin by rubbing with a tea towel. Slice potatoes into rounds and place into a zip top bag. Add the vinegar and toss to coat all of the potatoes. Place the bag into the refrigerator overnight.


    In a large mixing bowl, combine the mayonnaise, mustard, parsley, tarragon, garlic, cornichons, onions, and celery. Once evenly combined, add the potatoes and season with salt and pepper. Let the salad chill in the refrigerator for at least an hour before serving.
    I love this stuff and cannot say I have ever tasted bad potato salad due to the good cooks like my mom that make it.

The meat mixture should hold together and be moist. Season with salt and pepper and keep warm. Heat the beans over low heat or in the microwave and keep warm. Place a layer of lettuce in the bottom of each tortilla bowl. Layer the beans, beef mixture, tomatoes, onions, salsa, sour cream, cheese and olives. Sprinkle with scallions and serve immediately.

    all you need is some nacho chips(or pita bread), ground beef(or if you perfer turkey), tomatoes, letece, cuucembers, shreeded cheese, sour cream cheese, a spicy indregent(i perfer pepper and curshed red chilli peppers). start by browning the meat that you prefer in a fying pan with a little water to cover the bottom of the pan so it won't stick. use a spatula to chop the meat up, while in the frying pan, to small chunks while stirring the meat. all the while, start to prepare the salad part of the dish while the meat is cooking. chop as much letece as desired into a small bowl(i perfer roman letece) chop tomatoes and cuumcmbers into bowl also. check the meat again and chop into even small peices(like tacos look) and add the spicy indergents of your choice. once all of the meat is browned an ready to be servered you can go back to the salad. it all depends on you what you would like to have in this dish, because everyone makes it alittle different. start by tossing the salad to make it even(if you like you can add the cheese now or later). some like to put salad dressing into there salads if you would like to, go ahead and do so(i perfer itatlin dressing). now to the nachos; some like whole nachoes but i perfer mines to be warm and into broken pieces. you can warm the nachoes or pita bread up in the microwave for like a minute if that long just to get them warm. get you plates out and put either the nachos or pita bread on the plate. add as much meat as you would perfer,then the salad(if you didn't add the cheese to the salad already you may top the cheese ontop now) all you have to do is add the finishing touches which is the sour cream cheese just add alittle ontop and you have a tasty taco salad, enjoy!

    In a hurry, I like to put together ';Three bean salad';. I go to my cupboard and grab a can of kidney or chili beans, a can of green beans and a can of yellow (wax) beans, drain them and put them into a large bowl with a small diced onion.


    For the dressing I mix a half cup sugar and a half cup vinegar with a half cup salad oil and some seasonings ( usually salt, pepper, garlic powder and a tiny bit of basil). Mix all of this together and top with parsley, or dried parsley flakes.

    I am really into this arugula salad lately. It is very easy....ok, get arugula, You need a couple of lemons, squeeze the juice from the lemons, add a tiny (very tiny) bit of olive oil and shake well. You can also vary it by adding dried cranberries, or fresh rasberries....or poached pears, or chopped up pears.....

    1 (16-ounce) can dark red kidney beans, drained/rinsed


    1 (14.5-ounce) can cut green beans, drained/rinsed

    1/2 cup chopped red bell pepper


    2 tablespoons minced red onion

    Drain tuna and put in large bowl. Add diced sweet pickles (or pickle relish) about 2 tablespoons. Add any or all of the following: 1/2 cup finely chopped onion (white is milder than yellow, red is milder than white), chopped green pepper (about 1/4-1/2 cup), finely chopped celery about 1/4 cup (I put mine in the microwave for about one minute so it's not so crunchy) add canned or fresh diced tomato and a liberal amount of lettuce. (The mustard will cut back the ';fishy'; taste of the tuna and younger kids will eat it more easily.) Oh, I almost forgot, add 2 dashes of Tabasco to bring out the taste, more if you like it spicey!
    MAGIC TUNA FISH SALAD SANDWICHES





    2 cans of tuna fish packed in water


    1 bunch of green onions


    3 jalapeno peppers


    1 cup of bean sprouts


    1 cup of fresh white mushrooms


    1 medium tomato


    several leaves of romaine lettuce


    1 cucumber


    3 tablespoons of mayonnaise (or if you're concerned about fat/calories use fat-free mayo)


    parmesan or romano cheese (you can also top with sliced cheddar, monterey jack, pepper jack or muenster)


    2- 4 slices of whole wheat bread





    Chop the following ingredients into small pieces; green onions, mushrooms, set aside.


    Slice jalapenos down the middle from top to bottom, discard seeds, chop into small pieces and set aside.





    Slice tomatoes and peel and slice cucumbers, keep these ingredients seperate from the other veggies.





    In a large bowl mix 2 cans of drained tuna, 3 tablespoons of mayonnaise thoroughly, add jalapenos, bean sprouts, green onions and mushrooms, stir ingredients until everything is mixed into tuna and mayonnaise.





    Spoon this mixture onto a slice of whole wheat bread covering bread evenly, top with cheese, tomato slices, lettuce and cucumber slices and finish with a slice of wheat bread on top. Cut diagonally serve with a slice of pickle and enjoy

    1 can of tuna


    2 tablespoons mayonnaise (or three tablespoons ranch dressing)

    Toast the bread then put about a quarter of the tuna mix and the cheese between the slices and, if you wish toast with butter and a sprinkling of shredded Gruyere (or whatever cheese you like,) in a skillet... The toasted cheese on the outside of the bread has a richer flavor, just don't burn it.

    1/2 can tuna


    2 slices bread


    1 slice american cheese (or any cheese)


    2-4 tablespoons mustard

    5-8 crackers, crushed into small pieces

    I've had this before and it's so easy to make, you won't need a recipe. This is my own recipe, so I'm only guessing at amounts, but I do like to taste as I go! After the setting time, I always taste, re-season and add more veggies if I want. Broccoli, Asparagus, Mushrooms are my favorites, heck, even yellow squash. The colors are beautiful and the flavor is fantastic!





    1 lb. Rotini Pasta (Tri-colored is nice) cooked, drained.


    Italian Dressing (use your favorite), Balsamic Vinaigrette is better!


    1/2 lb. Salami, cut into 1/2'; cubes


    1/2 lb. Provolone, same size as salami (Fresh Mozz is great too)


    Cherry tomatoes, (yellow and red, if you can get them) cut in half


    English Cucumbers, 1'; dice


    Red Onions, 1/2'; dice


    Black Olives (optional) I personally don't like them


    Fresh Ground Pepper


    Parmesan Cheese, Flat Leaf Parsley to garnish

    SICILIAN PASTA PESTO SALAD





    2 lbs. ziti, penne, or other pasta, cooked





    Pesto Sauce:





    2 cups fresh basil leaves, chopped


    1/2 cup walnut or pine nuts (optional)


    4-6 large cloves garlic, minced or pressed


    1 cup olive oil


    1 1/4 cups grated Parmesan cheese


    3-4 anchovies, blended (optional)


    1/4 teaspoon crushed red pepper flakes


    dash of black pepper


    salt to taste





    Place the olive oil into a small saucepan add the garlic, red pepper, grated imported Parmesan cheese and herbs and spices. Crush the anchovies into the oil until blended. Bring to a simmer for 1 minute and immediately remove from heat.


    Pour this mixture over cooked hot pasta, stir well, and serve with bruschetta.





    CHICKEN PASTA SALAD





    3 Chicken Breasts


    2 cups Rotini or Shell Pasta (cooked, rinsed and cooled)


    1/2 Red Pepper


    1/2 Green Pepper


    8-10 cherry tomatoes (halved)


    1/4 cup Feta cheese crumbled (optional)


    1/4 Ceasar Salad Dressing (more or less to taste and to coat)





    Cook chicken until no longer pink in middle. Chop into small pieces. Chop peppers and add to tomatoes in large bowl. Add chicken, pasta and feta to large bowl. Add Ceasar salad dressing and mix well. Refigerate until needed.


    GARDEN PASTA SALAD WITH EQUAL

    1 pound penne or medium pasta shells, cooked, drained, cooled


    1 large yellow or red bell pepper, sliced


    1/2 cup fresh or frozen peas, cooked


    1/2 cup sliced green onions


    1/2 cup blanched sugar snap peas

    1/2 cup fat-free mayonnaise


    1/2 cup red wine vinegar


    1/4 cup fat-free milk


    1/4 cup minced fresh parsley


    3 tablespoons Equal庐 Spoonful*


    2 teaspoons drained green peppercorns, crushed (optional)


    Salt and pepper, to taste





    Combine pasta, bell pepper, peas, green onions, snap peas and carrots in salad bowl. Blend mayonnaise vinegar, milk, parsley, Equal庐 and peppercorns, if desired.


    Stir dressing into salad mixture. Season to taste with salt and pepper. Refrigerate, covered, 2 to 3 hours to allow flavors to blend.

    Does this sound like your salad. Instead of the cranberries you can sub raspberries.





    CRAN/RASPBERRY SPINACH SALAD





    1 lg. pkg spinach salad leaves


    1/3 pkg goat cheese


    3/4 cup walnuts


    1/2 cup dried cranberries


    1 bottle raspberry vinaigrette





    Divide the spinach leaves onto 4 small saucers (or plates).





    Cut the goat cheese into small pieces (about the size of a crouton). Sprinkle onto of the salads.





    Sprinkle the walnuts on each salad.





    Sprinkle the dried cranberries on each salad.





    Top with Raspberry Vinaigrette.





    Note: If you want more goat cheese, walnuts or cranberries then please feel free to add them. Enjoy!!

    5 anchovy fillets, minced

    4 cups day-old bread, cubed

    DIRECTIONS


    Mince 3 cloves of garlic, and combine in a small bowl with mayonnaise, anchovies, 2 tablespoons of the Parmesan cheese, Worcestershire sauce, mustard, and lemon juice. Season to taste with salt and black pepper. Refrigerate until ready to use.


    Heat oil in a large skillet over medium heat. Cut the remaining 3 cloves of garlic into quarters, and add to hot oil. Cook and stir until brown, and then remove garlic from pan. Add bread cubes to the hot oil. Cook, turning frequently, until lightly browned. Remove bread cubes from oil, and season with salt and pepper.


    Place lettuce in a large bowl. Toss with dressing, remaining Parmesan cheese, and seasoned bread cubes.

    1 whole Chipotle pepper, diced (available at many Mexican food specialty markets, or from The Faithful Pilot)


    1/4 cup red wine vinegar


    2 tablespoons lemon juice


    1-1/4 cups honey


    1/2 cup olive oil

    1 lb ground beef


    1 head lettuce


    1 bottle Catalina dressing


    1/2 onion, small dice


    8 ounces shredded cheddar cheese


    7-10 ounces tortilla chips





    Brown the ground beef and drain off the grease and allow to room temperature.


    Make sure you drain the grease off well or it will sift to the bottom of your salad bowl.


    Chop the lettuce to bite sized pieces.


    In a large salad bowl place in the lettuce, cheese, ground beef and onion.


    Crush the tortilla chips lightly onto them and mix it up.


    Add enough catalina to cover your salad.


    I used about half of a bottle for this.

    Prepare the ground beef as directed by taco seasoning package and set aside.


    In a large bowl, combine the beef mixture, lettuce, red onion, green onion, pinto beans, kidney beans, tomatoes, avocado and cheese. Mix well.


    Before serving, add the corn chips and enough dressing to coat. Mix well and serve immediately.
