1/4 cup Brown Sugar





1/4 teaspoon garlic powder





1/4 teaspoon black pepper





2 teaspoons yellow mustard





1 teaspoon Worcestershire sauce

Good old tomato soup dressing, sometimes called Catalina French. This was always my younger sisters favorite dressing in the whole wide world. Here it is updated and calorie reduced. Ready for mixing and eating.





In a large bowl combine the tomato soup with all of the other ingredients. Use a whisk to make everything smooth and creamy. Transfer the mixture to a pint-sized container. Chill until serving time. Keeps about 2 weeks in the fridge.





Makes 2-cups or 16 servings: 2-tablespoons per serving.





Per Serving (excluding unknown items): 41 Calories; 2g Fat (41.2% calories from fat); trace Protein; 6g Carbohydrate; trace Dietary Fiber; 0mg Cholesterol; 109mg Sodium.

1 (7 oz.) pkg. dry ranch style salad dressing mix


1 c. buttermilk


1 c. plain low fat yogurt





Mix ingredients until smooth to creamy. Refrigerate several hours before serving. 10 calories per tablespoon.

Where can I find the recipe for th Pecan Crusted Chicken Salad from TGI Fridays?

TGI FRIDAY'S PECAN-CRUSTED CHICKEN SALAD





CHICKEN:


4 (4 ounce) chicken breasts


3 cups chopped pecans


2 cups flour, divided


3 large eggs


1 ounce milk


GLAZED PECANS:


1 cup chopped pecans


1/4 cup dark brown sugar


1 tablespoon water


SALAD:


1 head romaine lettuce


1/4 cup balsamic vinaigrette dressing


1 can mandarin oranges


1/2 cup craisins (dried cranberries)





CHICKEN BREASTS:


Preheat oven to 350 degrees F.





Mix 2 cups pecans with 1 cup flour and pulsate in Cuisinart or robot coupe. Place remaining 1 cup flour in one bowl. Place pecan flour in a second bowl.





Mix eggs and milk for batter place in a third bowl.





Coat chicken first in flour, then in egg batter and third in pecan flour.





Saute chicken breasts in vegetable oil over medium heat until browned on both sides.





Bake chicken breasts in oven at 350 degrees F for 7 to 8 minutes or until fully cooked, cool and slice.





GLAZED PECANS:


Mix chopped pecans with brown sugar and water in a skillet. Heat until pecans are glazed; set aside.





TO ASSEMBLE SALADS:


Toss romaine lettuce with glazed pecans, balsamic vinaigrette, mandarin oranges, craisins and bleu cheese crumbles. Portion salad onto two salad plates. Top with sliced chicken.





Yield: 2 salads

    This is the salad dressing recipe I mostly use for Bon Bon Chicken, a Szechuan appetizer, shredded chicken top on rice noodle salad (steamed chicken + cucumber slices+ rice thick noodle or bean thread sheets)

    1 tablespoon sesame oil


    1 teaspoon of fresh garlic (chopped finely)


    1 teaspoon chili oil (optional)


    1 tablespoon soy sauce


    1 tablespoon rice vinegar


    1 teaspoon sugar


    2 tablespoons sesame paste (or peanut butter)


    1/2 teaspoon roasted white sesame seed (as garnish)





    Mix all ingredient well and pour on salad, sprinkle sesame seed on top. (You may add more sesame paste to thicken the dressing)





    Here is another one which I use for roasted chicken salad (roasted chicken, lettuce, cherry tomatoes)

    2 gloves of garlic, crushed

    1 tablespoon rice vinegar (or balsamic vinegar)


    a pinch of salt


    1 teaspoon of sugar


    1 teaspoon ground peppercorn


    1 tablespoon of sherry, cooking wine


    2 teaspoon of sesame oil





    1) Heat frying pan or wok on low heat, add sesame oil and stir fry garlic %26amp; ginger till golden, add all other ingredients into the pan / wok. Bring to boil. Remove from heat. Let it cool.

    Chinese Chicken Salad Dressing





    1 cup Granulated sugar


    1 cup Water


    1/4 cup Rice Wine Vinegar (or to taste)


    Water


    1 x Sweet Pickled Ginger, as much as you like (See Note)





    Note:


    ( I used ';pink';, thinly sliced sweet pickled ginger).


    Place the sugar and water into a saucepan. Bring to a boil and boil until the sugar is completely dissolved. The mixture will be hot at this point. I added the pickled ginger at this point. Let the mixture cool to room temperature.


    Pour in the rice wine vinegar (I only had the seasoned-which is sweet-probably would be better off using the unseasoned). Add the vinegar and taste. Keep adding vinegar until it's as tart/sweet as you like. If the dressing is too strong, add a little water and taste. Keep adding the water until it's what you remember from your favorite Chinese restaurant. Refrigerate overnight to let the flavors blend.

    HAITIAN CARROT SALAD





    For the salad:


    4 potatoes, peeled and cubed


    1 carrot, peeled and minced

    1 small beet


    2 eggs

    2 cloves garlic


    1/3 cup red bell pepper diced + 4 whole peppers for

    1 avocado


    1 mango


    2 tomatoes diced


    1 head iceberg lettuce, shredded

    Prepare the salad:





    Boil potatoes and carrot in water with 1 teaspoon salt for 10 minutes or until tender.





    Boil beet separately in water with 1 teaspoon salt until tender, then peel and mince.





    Boil eggs separately in water with 录 teaspoon salt until hard.





    In a bowl, place cubed potatoes, beet, sweet peas, carrots, onion, vinegar, red and green bell peppers, garlic, avocado, tomatoes, mango and lettuce and mix with mayonnaise. Add black pepper.





    On an open flame roast the peppers quickly to blister the skin a bit. Cut the tops off and hollow out the cavity. Fill the peppers with the salad and serve.

    I am a former chef and all Waldorf salad contains apples, celery, white or red grape (seedless), walnuts (toasted), and a acidified whipped cream dressing. I mix all the ingredients, now with the apples I peel them but that is up to you, and give them a bath in a bit of water and lemon juice to keep them from browning.





    You can assemble the ingredients and at the last moment mix them, this prevents it getting soggy, I mix a bit of mayo, lemon juice, a bit of sugar with prepared whipped cream and this is up to you to, real or a non-dairy topping, lemon juice, 1/2 teaspoon of sugar or honey and 1 good spoon of mayo, mix the apples, celery and grapes in a bowl and at the end sprinkle the walnuts over it, chilled for 10=15 minutes, serve it on lettuce leaves or cups with a slice of apple and a grape for decoration.





    It is one of these salads were it is good for one serving, it does not keep well, I have made this in a number of hotels I was a sous chef with, it can be done all ahead of time and then assembled at dinner time, even get the garnishes and lettuce ready.

    What You Need


    3 Granny Smith apples, cored


    3 Red Delicious apples, cored 2 cups mayonnaise


    1/4 cup white sugar


    3 tablespoons lemon juice


    3 tablespoons orange juice


    2 cups whipped cream


    6 stalks celery, finely diced


    1 cup golden raisins








    What You Do


    Dice apples with skin still on. Place in a bowl of water with a little lemon juice to keep them from turning brown.


    In a large bowl, whisk together the mayonnaise, sugar, lemon juice and orange juice. Fold in the whipped cream.


    Drain the apples and add to the mayonnaise mixture, along with the celery and raisins. Stir until ingredients are evenly coated.
    I have no idea who Rory Emerald is, but this is a great Waldorf Salad recipe.





    1/2 cup chopped, slightly toasted walnuts


    1/2 cup celery, thinly sliced


    1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins)


    1 sweet apple, cored and chopped


    3 Tbsp mayonnaise


    1 Tbsp fresh lemon juice


    Salt


    Pepper


    Lettuce





    In a medium sized bowl, whisk together the mayonnaise (or yogurt) and the lemon juice. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce.

    Chicken Ni莽oise Salad





    Ingredients:


    12 cups loosely packed fresh spinach leaves


    2 boneless, skinless chicken breasts, grilled and sliced


    1/2 pound fresh whole green beans, cooked and chilled


    8 small red potatoes, cooked, quartered and chilled


    12 cherry tomatoes, halved


    2 hard boiled eggs, sliced


    2 (6 ounce) jars marinated artichoke hearts





    Dressing:


    1 tablespoon capers


    1/4 cup Kalamata olives


    2 tablespoons balsamic vinegar


    1 tablespoon anchovy paste


    1 tablespoon Dijon-style mustard


    3 cloves garlic, minced





    Drain artichoke hearts and reserve liquid. Remove pits from Kalamata olives and slice. Combine reserved artichoke liquid, sliced kalamata olives and remaining dressing ingredients in a container with a tight fitting lid. Shake well and refrigerate at least 2 hours.





    Arrange 2 cups spinach leaves on 6 plates. Divide ingredients and arrange chicken, green beans, potatoes, tomatoes, sliced egg and artichoke hearts separately on top of the spinach. Drizzle with dressing and serve.

    INGREDIENTS


    2 cups fresh raspberries


    1/3 cup sugar


    1/3 cup vegetable oil


    2 tablespoons white wine vinegar or cider vinegar


    1/4 teaspoon Worcestershire sauce


    1 (6 ounce) package fresh baby spinach


    1 small red onion, thinly sliced, pulled into rings
